Classic Potato Salad
The original potato salad is a timeless comfort classic that defines backyard BBQs and family picnics. It features boiled potatoes tossed in a rich, tangy dressing typically made from a base of mayonnaise, mustard, and a splash of vinegar.

Ingredients

  • 3 lbs Yukon gold potatoes
  • 3-4 ribs celery, diced
  • 2 green onions, sliced
  • 1/2 teaspoon paprika (optional)
  • DRESSING:
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon or yellow mustard
  • salt and pepper to taste

Directions

  1. Peel potatoes and chop into bite-sized pieces. Add potatoes to a large pot and over with cold salted water by one inch.
  2. Set over high heat and bring to a boil. Cook until fork tender, about 15 minutes. Drain and set aside to cool.
  3. In a large bowl, whisk together the mayonnaise, relish, apple cider vinegar, mustard, salt and pepper.
  4. Add the potatoes, celery, and green onion and stir to combine. Adjust seasoning as needed.
  5. Chill until ready to serve, at least 2 hours. Sprinkle with paprika before serving, if desired. Enjoy!
