Our whole beef briskets are quite large (averaging 12 pounds) but can range a couple pounds less or more depending on animal size. Feel free to indicate in the order notes what range you’d prefer so we can try to best meet your needs.
Many folks purchase a brisket with classic BBQ in mind. Because the brisket comes from the chest of the animal, it is a muscle that is worked and muscles that are worked more can be quite tough. However, with a little TLC, it can be delicious, tender, and desirable with a deep beef flavor.
You can choose to prepare your brisket many ways. For those that have a smoker: you know what to do. Otherwise, just make sure as a rule of thumb to go with low temperatures for a long period of time: 8-12 hours. Make sure when cooking in liquid or braising, to provide at least a few hours so the meat has time to break down the collagen fibers throughout the roast.
