Originating from the fatty, muscular section of the shoulder blade near the loin this perfect marbled cut is just the cut for being cooked low and slow.

These pigs have the best life possible when on our farm. From the moment they are born or brought to our farm, our animals are treated with the utmost respect. They are also provided free-choice locally-milled grains to ensure they have the best nutrients. Our animals are never fed animal by-products and are never given growth hormones or steroids.
