Aptly named because it is located above the bottom and eye round roasts, the top round roast is a great lean roast that is wonderful as an oven roast for a traditional roast beef. It can be slow roasted, braised or cooked with a sous vide. This roast comes from the rump of the cow, which is an area where the muscles are worked more often from walking and moving. This cut is more tender than a bottom round or eye round, which is why it is a great oven roast choice. This cut is great for a mid week meal like pot roast, or braise in the oven for a few hours and serve with your favorite sides for your next dinner party.
