The skirt boasts a deep, rich, beefy flavor. We feel this is an underappreciated steak and are glad it's finally gaining popularity in most recent years. Although this cut is less tender it is extremely flavorful and when marinated first and sliced against the grain it's delicious. A great steak for the grill, under the broiler, or stove top. Excellent cut into strips and topped with a chimichurri or bold flavorful sauce.
Well known as a fajita cut, we also like it threaded on skewers for beef kabobs with strong herb and garlic seasonings.
