The excellent marbling and thick cut of these loin chops is similar to the beef porterhouse cut in style. A nice fat strip around the edge provides a succulent flavor and a crisp texture when seared. These are cut approximately 1" thick and are bone-in, giving you the best flavor possible from the lamb.
They can be grilled, pan-seared, baked or braised with your favorite blend of spices. One of our favorite ways to prepare these loin chops is grilled and finished with a refreshingly light and cooling mint chimichurri sauce that compliments the rich and flavorful meat beautifully. When preparing your lamb loin chops, we highly encourage using a thermometer to ensure these fast-cooking cuts don't overcook. They are best served between medium and medium rare to get the best flavor experience.
Our pasture-raised lamb loin chops come in 1 lb. packages of premium lamb, averaging around one or two chops per package, and are vacuum-sealed for freshness. These sheep have the best life possible when on our farm. From the moment they are born or brought to our farm, our animals are treated with the utmost respect. When the weather permits, rotational grazing allows for the best health of the animals while also enabling proper stewardship of the pastures. They are also provided free choice of locally milled grains to ensure they have the best nutrients. Our animals are never fed animal by-products and are never given growth hormones or steroids.
