Our ground chicken is the best of both worlds: a combination of white breast meat and dark thigh meat. This creates the perfect balance of fat content for juiciness that keeps the meat from drying as well as a marriage of flavor that brings both cuts together perfectly.
We use this just like any other ground meat but we especially like making chicken sausage patties with different mix-ins to create a full flavor profile. You can include typical sausage flavors like sage, thyme, and fennel or go completely unique with sweet bites of cooked apple and onion. This is a great option for lighter versions of homemade chicken burgers, meatballs, meatloaf... the sky is the limit with ground meat like this!
