This loin roast is from the area between the shoulder and the leg of the pig and can be used to cut your own pork chops. This cut makes for a lean and tender roast perfect for roasting in the oven. The one thing this roast might not be suitable for is braising or stewing, as the meat may get too tough and does not hold up well when cooked in these methods.
