Farmer's Casserole

This farmer's casserole with hash browns & ham combines all of your favorite breakfast ingredients, such as eggs, hash browns, ham, and cheese, into one hearty and delicious overnight breakfast casserole.

Ingredients
- (2 cups, cooked and diced) Fresh Boneless Smoked Half Ham
- 6 cups frozen hash browns
- 1 ½ cups shredded Colby jack cheese
- 2 green onions chopped
- 8 large eggs
- 2 12 ounce cans evaporated milk
- salt and pepper to taste
Directions
- Prep a 9×13-baking dish with non-stick spray; set aside.
- Spread the frozen hash browns evenly along the bottom of the casserole dish. Top with ham, cheese, and green onions.
- In a large mixing bowl, whisk to combine eggs, evaporated milk, salt, and pepper. Pour into the baking dish. Top with green onions, if desired.
- Cover and place in the refrigerator overnight, or until ready to bake.
- When ready to bake, preheat the oven to 350° F. Uncover the casserole and bake for 1 hour or until the center is set and firm.
- Remove from the oven and allow to sit for 5 minutes before slicing and serving.
Notes
Refrigerate leftovers in an airtight container for up to 3 days.
