Pork Belly Burnt Ends

Pork burnt ends are smokey, sticky chunks of pork belly that are coated in a dry rub, smoked until they have a deliciously crunchy bark, and finished off with a healthy glaze of sticky barbecue sauce. If you've been fortunate enough to try them at any point in your life, you'll know, they are absolutely delicious. Smokey, sticky, and with that insane crunchy bark.

Ingredients
- (4 lbs.) Skin-On Pork Belly
- 3 TBS Olive Oil
- 1 Cup Dry Rub
- BBQ Sauce - if desired
- FOR THE DRY RUB:
- 1 Cup Brown Sugar
- ½ Cup Kosher Salt
- 4 Tablespoons Smoked Paprika
- ½ Tablespoon Onion Powder
- ½ Tablespoon Garlic Powder
- 1 Teaspoon Cayenne Pepper
Directions
For the Dry Rub
- In a medium bowl, combine all dry rub ingredients.
For the Pork Belly
- Preheat grill to 250°. Trim excess fat and skin from the meat.
- Place pork in tin foil. Drizzle olive oil , and rub generously with spice rub. Wrap up in foil.
- Cook for about 4 hours.
- Slice into ~4 inch strips. Coat with BBQ sauce.
- Cook for another 45-60 minutes.
