Lemon Garlic Grilled Lamb Rib Chops

These tender, juicy lamb chops are flavor-loaded thanks to a zesty lemon-garlic marinade. Perfect as a main dish or as the most flavorful addition to any platter of grilled meats.

Ingredients
- 8 lamb rib chops
- 2 tsp kosher salt
- MARINADE:
- 5 cloves garlic minced
- 3/4 cup olive oil
- 2 teaspoons Dijon mustard
- 1/4 cup lemon juice
- 2 teaspoons lemon zest
- 1 tablespoon minced rosemary leaves
- 1/2 teaspoon black pepper
- 1 tsp kosher salt or more to taste
Directions
- Season the chops with kosher salt on both sides.
- Combine all of the marinade ingredients into a mixing bowl and whisk until combined.
- Place the rib chops into a sealable bag and pour half of the marinade on to them. Mix well and refrigerate for at least 2 hours but preferably overnight. Save the other half of the marinade to use as a serving sauce.
- Remove the lamb chops from the fridge at least 45 minutes before grilling.
- Prepare a charcoal or gas grill to medium-high heat. Grill the lamb chops for 2-3 minutes per side or until they reach an internal temp of 130°F- 135°F.
- Serve the chops immediately with the reserved 1/2 cup of serving sauce. Enjoy!
