Beef (or Sausage) & Lentil Soup with Vegetables
This Beef (or sausage) and Lentil Soup is healthy, hearty, economical and it's a complete dinner made in one pot. 100% perfect for freezing, use any veggies you want and switch up the spicing to your taste!

  • (1 lb.) Ancestral Blend Ground Beef
  • 2 Garlic Cloves - finely chopped
  • 1 Onion - finely chopped
  • 1 - 2 Cups Dried Lentils
  • 32 oz. Chicken or Beef Broth
  • 3 Carrots - diced
  • 2 Celery Stalks - diced
  • 24 Ounce Jar of Marinara Sauce
  • 1 TBS Olive Oil


  1. Sautee onion & garlic: Heat oil in a large pot over medium heat. Cook onion and garlic for 3 minutes until golden on the edges.
  2. Brown & spice beef in the same large pot: Add beef and cook until it's no longer red, breaking it up as you go
  3. Add water, beef or chicken stock, jar of marinara sauce and lentils. Give it a stir, bring to light boil, then place lid on and reduce to medium low so it's simmering gently, for at least 2 hours.  The longer it cooks, the tastier it is!

To thin the soup, add more chicken or beef stock, more marinara, or even a cup of water.

You can also use sausage instead of ground beef.
