Jacuterie: European Style Salami Made Locally in New York State.


Although we don't have our own cured meats to offer, we can't help but want to share the best of the local options for you to have at home, too.


Jacuterie's Sliced Soppressata is a classic spicy salami made with Calabrian peppers, garlic, and white wine. The excellent flavor of these peppers lends a perfect balance of fruit and spiciness. The Soppressata is excellent paired with wine and cheese, or on a pizza.


Jacuterie's European Style Salami are made slowly with traditional methods over the course of five weeks. We carefully select the best meat and then blend it with carefully measured spices, herbs, salt, and sometimes a splash of wine. The salami are given a short rest to allow the ingredients to marinate together. We then hang the salami in our curing chambers designed for four weeks until they are ready to eat.
