These pork sirloin chops are a thinner cut and are at a half inch thickness for a quicker cook time. We've kept the bone in for maximum flavor and there are 2 per package.
The sirloin chop cut comes from the hip end of the loin and is desired because of its higher ratio of protein to fat than some other chop styles. As with all pork chops, we love brining these the night before in a simple salt (and optional sugar) solution to maximize their moisture when cooking.
