This is one of our favorite hidden gem cuts, incredibly tender and comparable to a regular beef tenderloin. This muscle comes from the blade of the shoulder but is a portion that does not get worked like the others. Juicy and tender, it's shaped like the tenderloin but is smaller, a bit thinner, and more affordable. Perfect for grilling or broiling, or cutting into tender medallions.
